Comments about Calphalon Small Double Boiler Insert:

I use this double boiler insert to make cooked salad dressing we use instead of mayonnaise. If not done correctly, oil will separate out. Whisking ingredients together while cooking is best done in a round-bottom insert such as this. Also used it for rice pudding, lemon pie filling, cream filling for coconut or banana cream pie, melting chocolate, etc.
