The smooth tinned surface and "waffle" design on the bottom creates a stick-resistant surface. The combination of the steel gauge and the silver color allow the pan to absorb the proper amount of heat to produce a perfectly brown crumb and a moist, tender inside. Prepare the pan for baking by brushing with butter or oil and dusting with a light coating of flour.
