Directions
In a large salad bowl whisk together the vinegar, mustard, salt and pepper. Slowly whisk in olive oil until thick and creamy. Add the salad greens and toss to coat. Add onion, mushrooms and tomatoes and gently toss again. Distribute among 4 salad bowls. Using a large shaver or grater, cut large curls of Parmesan directly on top of each salad. Sprinkle with pepper. Serve at once. Serves 4.
