Before using the Performer, I'd never charcoal-grilled without using starter fluid - and didn't know what I was missing. Grilling on the Performer is like grilling on a campfire - the only added flavor to the meat is a hint of campfire. Using Weber's suggestion of searing, then placing the steaks on the perimeter worked well also. I'll never use a gas grill again...

Excellent convergence of the two most common grillin' methods - gas and charcoal. It's a twenty minute process until you are actually cooking, but at that point you are all coal. The first 5 - 10 minutes pumps propane fueled flames into the butt of the charcoal bins, bringing them up to a nice orange glow of heat, the next 10 - 15 minutes is all about letting the coals mellow. Then we're grillin' on coal, baby!
